The quest to explore as many different cuisines as possible isn’t just about trying new foods or trying to “scoop” our foodie friends (although those are important). It is much more. It is a decision to opt for interesting, over practical. For healthy and varied over processed and sameness. To chose to explore a city in a way that reveals the true city, the nooks and crannies that aren’t otherwise known and are sometimes shunned. It is a way to reach out on a micro level to people from countries we dimly understand from the media. And a means to support the American dream of many first generation Americans.
